Chimichurri steak sous vide w/cheddar pollenta, lemon/parm roasted cauliflower and chimi mushrooms.
I learned that I need to hit closer to 130-135 than 135-140 degrees, the first (lower) being what i used last time which yielded a slightly more rare steak. I finished them on the grill, I also prefer the cast iron sear i used last time. Either way this was damn tasty.
I used this for the Chimi sauce.
